Very high hydration, 48/72 hours of leavening and premium quality ingredients for a light and crumbly dough which makes our PIZZA and FOCACCIA palatable, healthful and highly digestible. And dulcis in fundo, our amazing Rosetta, a typical bread from Bologna, signature of Italian gastronomy thanks to its quality. Traditionally consumed by workers in their lunch break since 1700, the rosettas are slowly leavened, producing a very light roll with crunchy crust. Its particularity is the cooking method which creates a bubble inside the dough, resulting in a lighter bread that perfectly combines with any fillings.

    Long leavening and careful manufacture make our VENEZIANA a fluffy, pleasant brioche, perfect to be consumed plain or filled with custard. And then there is PANETTONE: a dough that needs no introduction, obtained from ancient mother yeast with a long and all natural leavening, enriched with candied orange peel and raisins.

      Our secret recipe

      Ancient recipes always have one ingredient in common: time. The secret of our doughs’ goodness is the 24/36 hours leavening and, most importantly, our special mother yeast, whose recipe was crafted in 2011, combining soft wheat flour, water, and three secreet varieties of fruit.

      Only organic flours without additives, stone ground with a process that allows you to obtain a light, digestible and delicious pizza.
